Strawberry White Chocolate Rice Pudding with Raspberry sauce (Serves 4)
Ingredients:
½ cup Royal Umbrella Thai Hom Mali New Crop Rice
1 cup water
10ml Vanilla Essence
½ cup Fine Sugar
1 ½ cup Fresh Milk
1 ½ cup Heavy Cream
½ tsp Salt
200 gm Strawberry Puree
(Optional may use 150 gm fresh strawberry to cook till soften with 50 gm sugar and sieve it to get the smooth puree)
¾ cup White Chocolate Droplets
Fresh Raspberry Sauce:
1 box Fresh Raspberry (Blend it till smooth in blender and set aside for later use)
Garnishing ingredients:
Fresh Mint leaves
Whip Cream
Fresh Cherry
Caramel Syrup
Sliced Almond toasted
Cooking Method:
1. Cook the rice with the water in a pot till boiling, cover it and reduce to low heat to simmer for 15 mins more or till the rice are fully soften
2. Add in vanilla essence, sugar, fresh milk, heavy cream, salt and strawberry puree to cook over medium-low heat for another 20 minutes. Consistent stirring to smoothen mixture.
3. Add in white chocolate droplets till melted and blend well with all.
4. Turn off the heat and remove the pot to let cool for 5 mins before serving in individual dishes
5. Top with Whip cream, caramel syrup, raspberry sauce, a cherry, sliced almonds and few mint leaves to serve.
