There is so much more to Hainanese cuisine than just Hainanese Chicken Rice and Beef Noodles. Hainanese cuisines focus on enhancing the natural flavours of the ingredients, thus only very mild seasonings are used in order to preserve the natural taste. With its strategic geographic position, Hainanese are able to access to fresh seafood catches which are used as the main ingredients in their cuisines.

Hainanese Pork Chop Rice

Ingredients

Golden Circle Vegetable Oil (Deep Frying)

3 cups Royal Umbrella Thai Hom Mali Rice 

3½ cups Water (to cook rice)

4 pcs boneless pork chop (about 160g each)

18 pcs soda cream crackers

1 cup plain flour

2 beaten egg

For Marinating the Pork Chops:

½ tsp baking soda

2 tbsp light soya sauce

¾ tbsp pork seasoning 

1 tbsp sesame oil

1 tbsp cornflour

1 tsp five spice powder

For dipping Sauce:

1 onion (cut into slices) 

3 medium-sized tomatoes (cut into sections)

100g green peas

1 tbsp worcestershire

¾ cup tomato ketchup

2 tbsp sweet chilli sauce

2 tbsp apple cider vinegar

2 tbsp sugar (to taste) 

1 cup water

A pinch of Salt (to taste)

1½ tbsp corn starch (to mix with 3 tbsp water for thickening)

Cooking Method:

For pork chop preparation:

1.     Flatten and tenderize the pork chops with a meat hammer. 

2.     Mix all the marinade ingredients together.  Once done, pour over the pork chops to marinate it. Set the marinated pork chop aside for about 1 hour.

3.     Blend the soda cream crackers into crumbs in the food processor. Transfer to the flat tray.

4.     Coat the marinated pork chops in plain flour, egg white and then the cream crackers crumbs. 

5.     Heat sufficient oil in a wok and deep-fry the pork chops until golden brown. Drain the oil in the fried pork chops and set aside.

For the sauce preparation:

1.     Heat pan and add oil. Stir fry the onions until it turns translucent.  Put in the tomatoes and green peas. 

2.     Pour in the worcestershire sauce, tomato ketchup, chilli sauce, apple cider vinegar, sugar and water and simmer it.

3.     Thicken the sauce with the corn starch water. 

4.     Dish a bowl of cooked Royal Umbrella Thai Hom Mali rice on one side of the plate.

5.     Lay the fried pork chops beside the rice. Pour the cooked sauce over the pork chops.
