Hakka Baked Chicken
Ingredients:
1. 2 chicken thighs
2. 1 tbsp salt
3. 2 tbsp shaoxing wine
4. 1 stalk spring onions
5. 4 slices ginger
6. 200g Royal Umbrella Thai Hom Mali Rice
7. 450ml water
8. Parsley
Cooking Method
1. Wash and drain 2 cups of Royal Umbrella Thai Hom Mali Rice
2. Marinate the chicken for 1 hour with 1 tbsp of salt and 2 tbsp of Shaoxing Wine
3. Wrap the chicken with a piece of baking paper with spring onions and 4 slices of ginger.
4. Place the washed rice together with 450ml of water in the rice cooker.
5. Place the wrapped chicken on the steam layer of the rice cooker.
6. Close the rice cooker and press start button and cook for 20-25mins.
7. Open the rice cooker and take out the wrapped chicken and scoop out the rice.
8. Unwrap the chicken and serve with a bowl of Royal Umbrella Thai Hom Mali Rice.
