Dried Oysters Fatt Choy with Mushrooms

Ingredients:

1. 8 dried oysters, soaked overnight
2. 8 dried chinese mushrooms, soaked overnight
3. 15g fat choy, soaked
4. 2 tbsp oil
5. 15g sliced ginger
6. 15g chopped garlic
7. 200g roasted pork belly
8. 4 tbsp light soy sauce
9. 3 tbsp sesame oil
10. 3 tbsp oyster sauce
11. 200g Royal Umbrella Thai Hom Mali Rice
12. Parsley for garnish
13. Braise Baby Abalone

Cooking Method

1.     Wash and drain 2 cups of Royal Umbrella Thai Hom Mali Rice

2.     Chop the roasted pork belly in to slices

3.     Stir fry using the rice cooker with 2 tbsp of cooking oil, sliced ginger and chopped garlic. Add in the oysters, Chinese mushroom and sliced pork belly and fry for another 1 minute.

4.     Remove all the ingredients from the rice cooker and place into a bowl.

5.     Soak the Fatt Choy with water and add to the top of the dish.

6.     Mix all the sauces together into a bowl.

7.     Place the bowl with the cooked ingredients on the steam layer of the rice cooker. Pour the mixed sauce over. Closed the rice cooker lid and cook for 20-25mins.

8.     Open the rice cooker and take out the steamer dish.

9.     Serve with a bowl of Royal Umbrella Thai Hom Mali Rice.
